Learn how to choose a texture analyzer probe in three steps

Before we use the texture analyzer to conduct experiments, one step is to determine what kind of probe to use for the following physical property tests. Among so many texture analyzer probes of different shapes and sizes, which one or which ones can bring us effective experimental results? Let me share with you the method of quickly determining the probe of the texture analyzer, which is briefly summarized into three steps.   In layman's terms, a texture analyzer is an instrument that can simulate the characteristics of an object that can be felt by human teeth or fingers when biting or pinching food or other items. Since it is to measure the characteristics of objects felt by people, the first step is to intuitively feel the texture characteristics of the things to be measured. When you face this object, write down the first word that reflects the texture that comes to mind. For example, when you encounter French fries, bread, biscuits, meat, yogurt and other foods, will the first words that come out of your mind be easy to bite, elastic, crisp, smooth and sticky? So, after getting these words, let's look at the second step.

The last step is to choose those probes that are similar to what you feel. When it is necessary to simulate the state of bite off, then choose the cutter probe. When simulating the state of pressing or pinching, it is necessary to choose a cylindrical probe. When pressing, the probe is small and the sample is large; while pinching, the probe is almost as large as the sample (close in diameter). When judging the brittleness of items such as biscuits, a three-point bending probe can be selected. When simulating chewing, jaw probes are often used. When encountering viscous liquid, choose liquid squeeze probe.
